Apple Oatmeal Bites

Servings: 15-20 bites

Ingredients:

  • 1 ½ cups old-fashioned rolled oats
  • ⅔ cup almond milk
  • ¼ cup unsweetened applesauce
  • 1 egg
  • ½ tsp ground cinnamon
  • ½ tsp baking powder
  • 1 small apple

Instructions:

  • Preheat the oven to 350 °F.
  • In a bowl, mix the dry ingredients (rolled oats, cinnamon, and baking powder) until well combined. Set aside.
  • In a separate bowl, whisk together the almond milk, applesauce, and egg until thoroughly combined.
  • Add the dry ingredients to the wet ingredients and mix until well combined. Allow the oats to soak up the liquid for a few minutes while you prepare the apple.
  • Peel and grate the apple, then add it to the mixture. Gently fold in the grated apple to ensure even distribution.
  • Spoon a tsp of the batter into mini muffin pans or egg molds.
  • Bake at 350 °F for 20-25 minutes, or until the oats are firm and slightly golden.
  • Allow the oatmeal bites to cool completely before removing them from the pan.

Notes:

  • The oatmeal bites can be enjoyed either hot or cold. I usually prefer to heat them up slightly, but they are delicious either way.
