Ingredients:
- 1 cup Greek yogurt
- 1/2 cup chopped berries (blueberries, strawberries, raspberries)
- ¼ cup shredded coconut flakes
Instructions:
- In a bowl, stir together the Greek yogurt and chopped berries.
- Once well combined, spread the mixture onto a rectangular shape on a tray lined with parchment paper.
- Sprinkle the shredded coconut flakes and any of your favorite toppings over the yogurt-berry mixture.
- Place the tray in the freezer for approximately 2 hours until the mixture solidifies.
- After freezing, remove the tray from the freezer and slice the mixture into small squares.
- Transfer the squares to a freezer-safe ziplock bag or container for storage.
Notes:
- I find it convenient to double this recipe, allowing me to have extra portions in the freezer for those times when I haven’t planned breakfast or need to provide my baby with a quick and easy snack.
