Healthy Cinnamon French Toast Sticks

Servings: 4-6

Ingredients:

  • 2 eggs
  • ¼ cup almond milk
  • Sprinkle of cinnamon
  • 3-4 slices of whole wheat bread, cut into finger shapes (thicker works better)
  • 1 tbs butter or oil
  • Toppings such as yogurt, banana, berries, peanut butter, etc.

Instructions:

  1. In a small bowl, mix eggs, almond milk, and cinnamon.
  2. Cut the slices of bread into finger shapes (3-4 slices per piece of bread).
  3. Melt butter or oil on a griddle or pan over medium heat.
  4. Dip each bread stick into the egg mixture, coating them evenly, and transfer to the griddle.
  5. Cook the sticks for 2-3 minutes on each side, or until both sides are browned. Repeat with the remaining sticks.
  6. Remove the toast sticks from the griddle and place them on a plate to cool slightly.
  7. Top with your favorite toppings such as yogurt, banana, berries, peanut butter, etc.

Notes:

  • These delicious French toast sticks can be frozen for later. Simply place them in a single layer in a freezer bag. When you’re ready to enjoy, microwave them for 10-20 seconds and savor the flavor!
