Coconut Chia Pudding

Ingredients:

  • 1 can (14.5 ounces) of coconut milk
  • 1 cup of plain whole milk Greek yogurt
  • 1 tsp of vanilla extract
  • ½ cup of chia seeds
  • Fresh fruit, shredded coconut, or other preferred toppings

Instructions:

  1. In a medium bowl, combine all the ingredients except the toppings. Mix until a smooth consistency is achieved.
  2. Transfer the mixture to airtight containers; small snack-sized containers work well, though a larger container is suitable too. Refrigerate for a minimum of 2 hours, or up to 3-5 days.
  3. To serve, enjoy the chilled pudding with your favorite toppings.

Notes:

  • Store the pudding in airtight containers in the refrigerator for 3-5 days.
  • For a dairy-free option, opt for nondairy Greek-style yogurt or almond milk.
  • If coconut isn’t your preference, regular milk can be substituted.
  • Achieve a smoother texture by blending the mixture before refrigeration or by using ground chia seeds.
