Creamy Garlic Mushroom Chicken

Ingredients:

  • 1 lb chicken thighs, cut into cubes
  • 1 cup chopped mushrooms
  • 2 cloves garlic, minced
  • 2-3 tbs butter
  • ½ cup heavy cream
  • ¼ cup chicken broth
  • ¼ cup shredded parmesan cheese
  • 1 tbs flour
  • ½ tsp paprika
  • ½ tsp garlic powder
  • ¼ tsp black pepper
  • Salt, to taste

Instructions:

  1. In a bowl, whisk together the heavy cream, chicken broth, parmesan, flour, and black pepper. Set the sauce aside for later use.
  2. Season the chicken with garlic powder and paprika.
  3. Melt butter in a pan over medium heat. Add the seasoned chicken and cook for a few minutes per side. When done and nicely browned, set aside.
  4. Add a little more butter to the pan, then add the minced garlic, sautéing it until fragrant.
  5. Add the mushrooms to the pan and cook until they become tender and slightly golden.
  6. Reduce the heat to low and pour the prepared sauce into the pan, allowing it to thicken. This typically takes a couple of minutes.
  7. Once the sauce has thickened, return the cooked chicken to the pan.
  8. Season with salt to taste.
  9. Serve over rice, potatoes, or pasta.
