Egg & Cottage Cheese Breakfast Casserole

Ingredients:

  • 1 tbs butter, melted
  • 12 eggs, beaten
  • 8 oz of your favorite cheese (pepper jack, cheddar, etc.), shredded
  • 1 (16-ounce) container cottage cheese
  • ½ cup all-purpose flour
  • ½ tsp salt

Instructions:

  1. Preheat your oven to 350°F and generously brush a 9×13 baking pan with the melted butter.
  2. In a large bowl, whisk together eggs, cheese, cottage cheese, all-purpose flour, and salt until well combined.
  3. Pour the egg and cheese mixture into the prepared baking dish, ensuring it’s evenly spread.
  4. Bake in the preheated oven for approximately 50 minutes, or until the eggs are completely set. You can start checking around 45 minutes, looking for a firm, golden top.
  5. Once done, remove from the oven and let it cool slightly before cutting into squares.
  6. Serve as is or with toppings like avocado or salsa.

Notes:

  • This recipe can be halved and prepared in an 8×8 or 9×9 baking dish. With the smaller portion, the baking time will be reduced to around 30-40 minutes.
  • This dish can be enjoyed both hot or cold, making it versatile for different meal preferences.
  • It’s also an excellent choice for little ones, serving as perfect finger food for babies.
  • Consider preparing it on a Sunday for a quick and convenient breakfast option during those busy weekday mornings.
