Ingredients:
- 1 ½ cups old-fashioned rolled oats
- ⅔ cup almond milk
- ¼ cup unsweetened applesauce
- 1 egg
- ½ tsp ground cinnamon
- ½ tsp baking powder
- 1 small apple
Instructions:
- Preheat the oven to 350 °F.
- In a bowl, mix the dry ingredients (rolled oats, cinnamon, and baking powder) until well combined. Set aside.
- In a separate bowl, whisk together the almond milk, applesauce, and egg until thoroughly combined.
- Add the dry ingredients to the wet ingredients and mix until well combined. Allow the oats to soak up the liquid for a few minutes while you prepare the apple.
- Peel and grate the apple, then add it to the mixture. Gently fold in the grated apple to ensure even distribution.
- Spoon a tsp of the batter into mini muffin pans or egg molds.
- Bake at 350 °F for 20-25 minutes, or until the oats are firm and slightly golden.
- Allow the oatmeal bites to cool completely before removing them from the pan.
Notes:
- The oatmeal bites can be enjoyed either hot or cold. I usually prefer to heat them up slightly, but they are delicious either way.
