Avocado Toast

Ingredients:

  • 1 slice of your favorite bread (multi-grain, sourdough, wheat, gluten-free, etc.), toasted
  • 1 small ripe avocado
  • 1 tsp of fresh lime juice
  • ½ tsp of extra virgin olive oil (optional)
  • A sprinkle of black pepper (optional)
  • Salt to taste

Instructions:

  • Begin by toasting your choice of bread until it reaches a golden brown.
  • While the bread is toasting, take a small ripe avocado and scoop it out into a bowl.
  • Add a teaspoon of fresh lime juice to the avocado.
  • Mash the avocado and lime juice mixture together until it reaches a smooth and spreadable consistency.
  • Once your toast is ready, generously spread the mashed avocado mixture on top, covering the entire surface of the bread.
  • Drizzle olive oil over the avocado spread.
  • Sprinkle a pinch of black pepper and salt on the avocado toast, adding a subtle kick of flavor.

Notes:

  • For my baby, I completely omit salt for this recipe.
  • Feel free to get creative and add your favorite toppings like cherry tomatoes, feta cheese, or a sprinkle of red pepper flakes for some extra zing.
  • Avocado toast is a versatile and nutritious option for a quick and satisfying meal any time of day. Enjoy!
