Ingredients:
- 3–4 slices whole wheat bread, torn into small pieces
- 3–4 slices deli ham (opt for preservative-free), chopped into bite-sized pieces
- 1 cup shredded cheddar cheese
- 8 large eggs
- 1 cup milk
- 2 teaspoons ground mustard
- ½ teaspoon ground pepper (adjust to taste)
Instructions:
- Preheat the oven to 400°F. Grease a muffin tin or use a silicone muffin tin for easy release.
- Distribute torn bread pieces evenly in the muffin tins, filling them about two-thirds of the way up.
- Sprinkle the chopped ham pieces evenly in each muffin tin.
- Sprinkle the shredded cheddar cheese equally among the muffin tins.
- In a separate bowl, whisk together the eggs, milk, ground mustard, and ground pepper.
- Evenly pour the egg mixture into each muffin tin.
- Place the muffin tin in the preheated oven and bake for 15-18 minutes, until the muffins are golden brown on top and cooked through in the center.
Notes:
- After baking and allowing to cool, arrange the muffins in a single layer within a gallon-sized freezer container or bag and freeze for later.
- To enjoy from the freezer, wrap a muffin in a damp paper towel and microwave in 30-second increments until thoroughly heated (usually around 1-2 minutes).
