Ingredients:
- 1 cup finely grated carrots (about 2 carrots)
- ⅓ cup grated cheese
- ¼ cup panko breadcrumbs
- 1 egg
- ¼ tsp garlic powder
- ¼ tsp onion powder
- ¼ tsp black pepper (optional)
- ¼ tsp salt (optional)
Instructions:
- Preheat the oven to 400 °F.
- Shred the carrots using the smallest size hole on a grater. Squeeze out as much moisture from the carrots as possible using your hands or a towel.
- In a bowl, combine the shredded carrots with the grated cheese, panko breadcrumbs, egg, garlic powder, onion powder, and black pepper (if using). Mix well until all the ingredients are thoroughly combined. It is easier to mix with your hands.
- Scoop out tablespoon-sized portions of the mixture and roll them into small balls. Place the balls on a pan lined with parchment paper. You can shape them into balls, tots, or patties, depending on your preference.
- Bake the carrot bites for approximately 15 minutes, or until the edges start to slightly brown.
Notes:
- These bites are best enjoyed fresh, but they can be stored in an airtight container in the fridge for up to three days. I’d recommend to reheat them before serving.
- In this recipe, I completely omit salt.
