Ingredients:
- 1 lb ground beef
- 1 yellow onion, chopped
- 1 can (15 oz) kidney beans, drained and rinsed
- 1 can (15 oz) tomato sauce
- 1 can (15 oz) petite diced tomatoes
- ½ cup frozen corn
- 3 tbs tomato puree
- 3 garlic cloves, minced
- 2 tbs chili powder
- 2 tsp cumin powder
- 1 tsp garlic powder
- 1 tsp dried oregano
- 1 ½ tsp salt
- ½ tsp pepper
Optional Toppings:
- Shredded cheese
- Chopped green onion
- Cilantro
- Sour cream
Instructions:
- In a large skillet, sauté the onion for 3-4 minutes until it becomes translucent.
- Add the ground beef to the skillet and break it apart with a spatula. Cook until it’s almost fully browned. Drain any excess fat.
- Stir in the minced garlic and spices (chili powder, cumin, garlic powder, dried oregano, salt, and pepper) into the skillet with the beef and onion. Cook for an additional 1-2 minutes, ensuring that the spices are well mixed.
- In your crockpot, combine the cooked ground beef mixture, kidney beans, corn, tomato sauce, petite diced tomatoes, and tomato puree. Stir everything together until it’s evenly combined.
- Cover the crockpot with its lid and set it to cook on low heat for 8-10 hours.
- After cooking, taste the chili and adjust the seasonings if needed. You can add more chili powder, salt, or pepper to suit your taste.
- Serve with shredded cheese, chopped green onions, cilantro, or a dollop of sour cream if desired.
