Classic crockpot chili

Ingredients:

  • 1 lb ground beef
  • 1 yellow onion, chopped
  • 1 can (15 oz) kidney beans, drained and rinsed
  • 1 can (15 oz) tomato sauce
  • 1 can (15 oz) petite diced tomatoes
  • ½ cup frozen corn
  • 3 tbs tomato puree
  • 3 garlic cloves, minced
  • 2 tbs chili powder
  • 2 tsp cumin powder
  • 1 tsp garlic powder
  • 1 tsp dried oregano
  • 1 ½ tsp salt
  • ½ tsp pepper

Optional Toppings:

  • Shredded cheese
  • Chopped green onion
  • Cilantro
  • Sour cream

Instructions:

  1. In a large skillet, sauté the onion for 3-4 minutes until it becomes translucent.
  2. Add the ground beef to the skillet and break it apart with a spatula. Cook until it’s almost fully browned. Drain any excess fat.
  3. Stir in the minced garlic and spices (chili powder, cumin, garlic powder, dried oregano, salt, and pepper) into the skillet with the beef and onion. Cook for an additional 1-2 minutes, ensuring that the spices are well mixed.
  4. In your crockpot, combine the cooked ground beef mixture, kidney beans, corn, tomato sauce, petite diced tomatoes, and tomato puree. Stir everything together until it’s evenly combined.
  5. Cover the crockpot with its lid and set it to cook on low heat for 8-10 hours.
  6. After cooking, taste the chili and adjust the seasonings if needed. You can add more chili powder, salt, or pepper to suit your taste.
  7. Serve with shredded cheese, chopped green onions, cilantro, or a dollop of sour cream if desired.
