Instant Pot Pork Tenderloin

Servings: 4-6

Ingredients:

  • 1 pork tenderloin, 1 ½ to 2 pounds
  • 1 tsp garlic powder
  • 2 tsp dried rosemary
  • 1 tsp dried thyme
  • 1 tsp salt
  • ½ tsp black pepper
  • 1 tbs extra virgin olive oil
  • ¾ cup low sodium chicken broth
  • 2 tbs low sodium soy sauce
  • 2 tbs honey or pure maple syrup
  • 2 tsp Dijon mustard
  • 2 tbs cornstarch (combined with 2 tbs water)

Instructions:

  1. Remove the pork from the refrigerator and let it rest at room temperature for about 15 minutes.
  2. In a small bowl, combine garlic powder, dried rosemary, dried thyme, salt, and black pepper.
  3. In a separate bowl, whisk together chicken broth, soy sauce, honey, and Dijon.
  4. Trim away and discard any silver skin from the pork tenderloin. Pat it dry with paper towels, then rub it evenly with 1/2 tablespoon of olive oil and sprinkle the seasoning mixture over the entire surface of the pork.
  5. Set your Instant Pot to “Sauté” mode. Allow it to heat for 1 minute, then add the remaining 1/2 tablespoon of oil. Place the pork in the Instant Pot and sear it on all sides until it’s lightly browned. Once browned, transfer the pork to a plate.
  6. Pour the chicken broth mixture into the Instant Pot. Use a wooden spoon to scrape along the bottom of the pot to deglaze it, ensuring there are no stuck-on bits of food to avoid the “burn” warning.
  7. Return the pork to the Instant Pot, coiling it if necessary to fit. Close and seal the Instant Pot. Cook on HIGH (manual) pressure for 3 minutes. Allow it to naturally release pressure for 12 minutes.*
  8. Check the pork using an instant-read thermometer. Pork is considered cooked at 145°F (if you’re close, the resting time will continue to cook it). If needed, lock the lid back in place and let it continue to cook in the residual heat for 2 to 3 minutes more.
  9. Remove the pork from the Instant Pot and place it on a cutting board or serving platter. Cover it and let it rest for 5-10 minutes while you prepare the gravy.
  10. Press “Cancel” on the Instant Pot, then press “Sauté.” Stir in the cornstarch and water mix. Allow it to come to a simmer while stirring frequently, then press “Cancel.” The gravy will continue to thicken with the residual heat. Stir it periodically.
  11. To serve, slice the pork crosswise into ½-inch slices. Generously top with the gravy and your favorite side.

Notes:

  • Make sure to follow the recommended cooking times to avoid overcooking the pork.
  • The resting time is essential for juicy and tender pork.
  • Feel free to adjust the seasonings and sweetness of the gravy to your taste.
