Ingredients:
- 2 cups chicken broth
- 1 cup long-grain rice, uncooked
- 1 tbs butter
- ¼ tsp garlic powder
- Zest of 1 lemon (adjust to your liking)
- 2 tbs lemon juice (about one lemon)
Instructions:
- In a medium pot with a lid, combine the chicken broth, rice, butter, lemon juice, and lemon zest.
- Bring the mixture to a boil, then reduce the heat to a simmer.
- Cover the pot and allow the rice to simmer slowly for 20 minutes, or until the liquid is absorbed.
- Fluff the rice with a fork and enjoy!
Notes:
- This recipe can also be made in a rice cooker. Simply add all the ingredients to the rice cooker, turn it on, and let it cook until the liquid is absorbed and the rice is fluffy.
