Peanut Butter & Banana Empanada

Total Time: 10 minutes
Servings: 1

Ingredients:

  • 2 slices of bread
  • 2 tbs smooth peanut butter
  • ½ banana, thinly sliced or 1 tbs of mashed berries

Instructions:

  • Using a cup, cut circles out of the slices of bread.
  • Spread a thin layer of peanut butter in the center of each bread circle, leaving a small space around the edges.
  • Place 3-4 thin slices of banana on one end of the bread. Alternatively, you can mash some fresh berries for filling.
  • Fold the bread over and press down the sides to seal.
  • Use a fork to firmly seal the edges on both sides.

Notes:

  • The “empanada style” adds a fun twist to the meal, but if you’re short on time, you can always make it as a regular sandwich.
