Poor Knights Toast (Swedish Fattiga Riddare)

Ingredients:

  • ⅓ cup milk
  • ⅓ cup flour
  • 1 egg
  • ¼ tsp salt
  • ¼ tsp vanilla extract
  • ½ tsp cinnamon
  • 4 slices of white bread
  • 2 tbs butter

Instructions:

  1. In a mixing bowl, combine the milk, flour, egg, salt, vanilla extract, and cinnamon. Whisk the mixture until it becomes a smooth batter.
  2. Heat a large skillet or griddle over medium-high heat and add 1 tablespoon of butter. Allow it to melt and coat the cooking surface.
  3. Dip each slice of white bread into the batter, ensuring both sides are well-coated.
  4. Place the dipped bread slices onto the hot skillet or griddle. Cook until they turn golden brown, approximately 2-3 minutes per side.
  5. Remove the bread slices from the skillet and place them on a serving plate.
  6. Serve with your choice of toppings like fresh berries, yogurt, banana slices, etc.

Notes:

  • Elevate this into a dessert by serving it with whipped cream and a drizzle of honey (for babies over 1 year old).
