Servings: 10-12 fritters
Ingredients:
- ¼ cup all-purpose flour
- ½ tsp baking powder
- 1 large egg
- 1 x 200g can sweetcorn, drained
- 1 large or 2 small spring onions, finely sliced
- 2 tbsp oil for frying
Instructions:
- Combine all the ingredients, except the oil, in a food processor. Process the mixture for about one minute until a smooth batter forms.
- In a large frying pan, heat a small amount of oil. Place teaspoonfuls of the batter into the pan, creating batches of 4 or 5 fritters. Cook for 1 to 1½ minutes until the undersides turn golden. Carefully flip the fritters and cook for an additional minute.
- For ease in turning, you can use the back of a spoon to gently guide the fritter onto a spatula.
- After cooking, briefly drain the fritters on kitchen paper to remove excess oil before serving.
Notes:
- Elevate the nutritional content by incorporating additional vegetables.
- These fritters make a fantastic snack or lunch.
- Store in the refrigerator for up to 3-4 days. For longer storage, you can freeze them for up to 2-3 months.
